It has been a fun past few weeks, battling the heat and the lack of rain, but we have made it to mid August and things are growing as good as can be expected with no rain!
We have been out watering the veggies every other night or so in order to keep them alive! And we are happy to see our efforts paying off with this weeks basket!!
This weeks basket
This week we have delicious veggies from the farm for everyone! Carrots, zucchini, peaches, hot peppers, greens, mint, onions and beans are in this weeks basket!
This weeks recipe
Green beans with lemon and garlic
- Green beans, ends trimmed
- 1 tablespoon extra-virgin olive oil
- 3 tablespoons butter
- 2 large garlic cloves, minced
- 1 teaspoon red pepper flakes
- 1 tablespoon lemon zest
Blanch green beans in a large stock pot of well salted boiling water until bright green in color and tender crisp, roughly 2 minutes. Drain and shock in a bowl of ice water to stop from cooking.
Heat a large heavy skillet over medium heat. Add the oil and the butter. Add the garlic and red pepper flakes and saute until fragrant, about 30 seconds. Add the beans and continue to saute until coated in the butter and heated through, about 5 minutes. Add lemon zest and season with salt and pepper.
This week on the farm
I believe that our beans are winding down for the time being, but we have another planting of beans that we will have ready hopefully in another few weeks. Next week, we will have some more eggplants, and hopefully some summer squash!!
Our potato plants are not liking the lack of rain, and are beginning to die off, but I checked a few plants this week and found tons and tons of delicious potatoes in the ground!! We are hoping to have those read in the next few weeks as well, once we dig them all up.
Tomatoes are a people pleaser, and I checked them earlier this week, and was very happy to see tons of tomatoes on the vine. Unfortunately they are still green, but once they redden up they will also be in the baskets ready for everyone.
